Ingredients for Banana Crumble Coffee Cake (makes 9 slices)
For the Batter:
3 medium bananas, mashed (~350g)
1 cup Greek yogurt (plain nonfat) (~227g)
2 large eggs
1 tsp vanilla extract
1/4 cup monk fruit, granular (~50g)
1 3/4 cups oat flour (~175g)
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon (optional)
1/2 tsp nutmeg (optional)
For the Crumble:
1/4 cup oat flour (~25g)
1/8 cup monk fruit (~25g)
2 tbsp butter (room temperature, grass-fed preferred) (~28g)
1/2 tsp cinnamon
Instructions
1. Preheat the Oven and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 9x9 square baking pan with non-stick spray, such as avocado oil, and set it aside.
2. Make the Crumble: In a small bowl, mix together 1/4 cup oat flour (~25g), 1/8 cup monk fruit (~25g), 2 tbsp butter (~28g), and 1/2 tsp cinnamon. Use a fork to combine until crumbly. Place the mixture in the fridge while preparing the batter.
3. Combine the Wet Ingredients: In a medium bowl, whisk together 3 mashed bananas (~350g), 1 cup Greek yogurt (~227g), 2 large eggs, and 1 tsp vanilla extract until smooth.
4. Combine the Dry Ingredients: In another medium bowl, whisk together 1 3/4 cups oat flour (~175g), 1/4 cup monk fruit (~50g), 1 tsp baking soda, 1/2 tsp salt, 1 tsp cinnamon, and 1/2 tsp nutmeg.
5. Mix the Batter: Add the wet ingredients to the dry ingredients, gently mixing until just combined. Be careful not to overmix, as this can affect the cake's texture.
6. Assemble the Cake: Pour the batter into the prepared 9x9 baking pan. Remove the crumble mixture from the fridge, break it into small chunks with a fork, and sprinkle it evenly over the top of the batter.
7. Bake the Cake: Bake for approximately 40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for at least 10-15 minutes before slicing.
