It’s FOOTBALL SEASON and we are Vikings fans out here in Minnesota ❄️🏈! Whether you're gearing up for game day or just craving a hearty, comforting meal, my "Eat the Packers" Beef, Tomatoes, Greek Yogurt, Rice, Onions, Spinach & Cheese Casserole is the perfect dish to make. This casserole is beefy, cheesy, packed with protein (hidden Greek yogurt!), and has a little bit of a kick. Plus, it just so happens to sport the colors green and yellow, making it the ultimate culinary statement for any Vikings fan ready to "eat the Packers"! 👊🏼

Beef, Tomatoes, Greek Yogurt, Rice, Onions, Spinach & Cheese Casserole in dish

Ingredients:

  • 2 lbs beef (seasoned with 2 tsp minced garlic, 1 tsp smoked paprika, 1/2 tsp crushed red pepper flakes, 1 tsp oregano, 1 tsp salt & 1/2 tsp pepper)

  • 1 cup jasmine rice + 1 cup water

  • 14.5oz can diced tomatoes

  • 1/2 large yellow onion diced + 1 tsp minced garlic

  • 4 cups or 120g spinach

  • 1 cup Greek yogurt

  • 1 cup shredded mozzarella cheese

  • 1/4 cup shredded cheddar cheese


Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. Season your ground beef with the herbs and spices listed above, then brown on the stovetop.

  3. Combine 1 cup rice, 1 cup water, and the full can of diced tomatoes in a pot. Place on the stovetop over medium-high heat until boiling, then cover and let simmer until cooked (~10 min), stirring frequently to prevent burning.

  4. Transfer the beef and rice mixture to a 9x13 baking dish.

  5. Dice the onion and add to the same pan used for cooking the beef, along with 1 tsp minced garlic. Cook until translucent.

  6. Stir in the spinach until it wilts.

  7. Mix the onions and spinach into the baking dish.

  8. Blend in Greek yogurt and mozzarella cheese.

  9. Top with more mozzarella cheese, cheddar cheese, and optional spinach leaves.

  10. Bake for 20 minutes.

  11. Serve and SKOL!

This casserole is SO delicious and so easy to make!! I had one bowl of it and was so full because of all the protein that is in it. Super nice for meal prepping because it makes a lot! I definitely recommend!!!
