Creamy High-Protein Quinoa, Chicken Sausage, Spinach & Potato Bowl

Ingredients:

  • 4 chicken sausages (I like Sabatino's organic basil and cracked pepper smoked chicken sausage)

  • 350g yellow potatoes (6-7 baby potatoes or ~2 medium potatoes)

    • 1/2-1 tbsp olive oil

    • 1/2 tsp granulated garlic

    • 1/2 tsp dried rosemary

  • 3/4 cup quinoa

  • 1.5 cups chicken broth

  • 5 cups spinach

Sauce:

  • 150g (3/4 cup) cottage cheese

  • 50g (1/4 cup) mozzarella cheese

  • 75g (4-5 tbsp) milk

Instructions:

  1. Cook the Chicken Sausages: Slice the chicken sausages and cook them in a pan with a little olive oil until browned. Once cooked, stir in the spinach until wilted. Set aside.

  2. Prep the Potatoes: Quarter the baby yellow potatoes and then cut each quarter in half. Toss them with 5g of olive oil, 1/2 tsp rosemary, and 1/2 tsp garlic powder. Cook in an air fryer at 400°F (200°C) for 12 minutes or until crispy and golden.

  3. Prepare the Quinoa: In a large pot, combine 3/4 cup quinoa with 1.5 cups chicken broth. Bring to a boil, then reduce to low heat and simmer until the quinoa is cooked and fluffy—about 15 minutes.

  4. Combine Everything: Add the cooked chicken sausages, wilted spinach, and roasted potatoes to the pot of cooked quinoa. Mix thoroughly to combine all the ingredients.

  5. Make the Sauce: In a blender, combine cottage cheese, mozzarella cheese, and milk. Blend for 45 seconds until smooth and creamy. Pour the sauce over the quinoa mixture and mix well.

  6. Serve: Divide the creamy quinoa mixture into three servings. Enjoy a hearty and nutritious meal that's perfect for lunch, dinner, or meal prep!
