Ingredients
1 cup (100g) old-fashioned oats
1/4 cup (30g) whole wheat flour
2 ripe bananas, mashed (200g)
1 egg
1 tsp cinnamon
1/2 tsp salt
2 tbsp chia or flax seeds (20g)
2 tbsp honey (30g)
1/4 cup (64g) peanut butter
1/3 cup (100g) sourdough discard
1/2 tsp baking soda
1 tbsp (14g) coconut oil, melted
2-3 tbsp (20-30g) chocolate chips
Instructions
Preheat Oven:
Preheat your oven to 350°F (175°C).
Mix Dry Ingredients:
In a large bowl, combine 1 cup (100g) old-fashioned oats, 1/4 cup (30g) whole wheat flour, 1 tsp cinnamon, 1/2 tsp salt, and 2 tbsp (20g) chia or flax seeds.
Add Wet Ingredients:
Add 2 mashed ripe bananas (200g), 1 egg, 1/4 cup (64g) peanut butter, 2 tbsp (30g) honey, 100g sourdough discard, and 1 tbsp (14g) melted coconut oil. Mix well to combine.
Incorporate Baking Soda and Chocolate Chips:
Add 1/2 tsp baking soda and 2-3 tbsp (20-30g) chocolate chips last. It's important to add the baking soda last to prevent it from activating early with the acid from the sourdough discard.
Form Cookies:
Scoop the dough onto a baking sheet lined with parchment paper, making 12 large cookies. You may need two baking sheets.
Bake:
Bake for 15 minutes, or until the cookies are lightly browned and set.
