High Protein, No Refined Sugar Sourdough Discard Fudgy Chocolate Bread 🍫🍞

I love a gooey, moist, chocolatey dessert, but usually they come with a high sugar and calorie count. I was AMAZED when I first made this recipe for high protein, no refined sugar sourdough discard chocolate bread (and have since tweaked it to perfection) at how healthy it was while still tasting decadent, fudgy, and sweet!

Ingredients

Dry Ingredients:

  • 1 cup sourdough starter (165g)

  • 1/2 cup whole wheat flour (60g)

  • 1 scoop (30g) chocolate protein powder (preferably vegan - I love this organic one)

  • 1/2 cup cocoa powder (58g)

  • 3/4 tsp salt

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 cup chocolate chips

Wet Ingredients:

  • 1/2 cup 2% greek yogurt (140g)

  • 1/3 cup honey (113g)

  • 2 tbsp monk fruit sweetener

  • 2 eggs

  • 2 tsp vanilla

  • 2 ripe bananas, mashed (250g)

  • 1/4 cup brewed coffee

For the Chocolate Glaze:

  • 50g Greek yogurt

  • 15g honey

  • 2 tsp cocoa powder

  • 1 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 8.5x4.5 or 9x5 inch loaf pan, a cast iron pan works great.

  2. Mix wet ingredients: In a large bowl, mix the Greek yogurt, honey, monk fruit sweetener, eggs, and vanilla. Add the cocoa powder, mashed bananas, salt, sourdough starter, and flour. Mix until combined.

  3. Add brewed coffee: Pour in the brewed coffee and let the batter sit for 2 hours to allow the sourdough to ferment.

  4. Add dry ingredients: After fermenting, add the baking powder, baking soda, and chocolate chips to the batter.

  5. Bake: Pour the batter into the greased loaf pan and bake for 45-55 minutes. For a gooier bread, check for doneness at 45 minutes.

  6. Prepare the glaze: While the bread is baking, mix together the Greek yogurt, honey, cocoa powder, and milk until smooth.

  7. Cool and glaze: Pour the chocolate glaze over the bread while warm, and then allow it to cool fully before cutting into it (I know, it's very hard to wait!)
