Ingredients:
Cauliflower:Ā 1 head, ~840g / roughly 8 cups florets
Turkey Sausage:Ā 2lb / ~907g
Seasoned with:
1 tsp dried thyme
1 tsp dried sage
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 tsp pepper
Yellow Onion:Ā 1 medium, ~150g
Minced Garlic:Ā 2 tsp
Chicken Broth:Ā 1/2 cup, ~120g
2% Cottage Cheese:Ā 1.5 cup, ~340g
Spinach:Ā 4 cups, ~120g
Parmesan Cheese:Ā 1/3 cup, ~33g
Instructions:
Prepare the Cauliflower:
Break cauliflower into florets.
Bring a large pot of water to a boil.
Add the cauliflower florets and cook until they are soft, approximately 5-7 minutes.
Drain the cauliflower and set it aside.
Cook the Turkey Sausage:
In a large skillet over medium-high heat, brown the turkey sausage with seasonings until fully cooked.
Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes, or until the onion becomes translucent.
Add the spinach and cook until wilted, about 2 minutes.
Pour in the chicken broth and stir to combine.
Let simmer for ~10 minutes.
Combine and Bake:
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the cooked cauliflower, turkey sausage mixture, and 2% cottage cheese. Mix well.
Transfer the mixture to a greased casserole dish and spread it evenly.
