Ingredients:

  • Cauliflower:Ā 1 head, ~840g / roughly 8 cups florets

  • Turkey Sausage:Ā 2lb / ~907g

    • Seasoned with:

      • 1 tsp dried thyme

      • 1 tsp dried sage

      • 1/2 tsp red pepper flakes

      • 1/2 tsp salt

      • 1/4 tsp pepper

  • Yellow Onion:Ā 1 medium, ~150g

  • Minced Garlic:Ā 2 tsp

  • Chicken Broth:Ā 1/2 cup, ~120g

  • 2% Cottage Cheese:Ā 1.5 cup, ~340g

  • Spinach:Ā 4 cups, ~120g

  • Parmesan Cheese:Ā 1/3 cup, ~33g

Instructions:

  1. Prepare the Cauliflower:

    • Break cauliflower into florets.

    • Bring a large pot of water to a boil.

    • Add the cauliflower florets and cook until they are soft, approximately 5-7 minutes.

    • Drain the cauliflower and set it aside.

  2. Cook the Turkey Sausage:

    • In a large skillet over medium-high heat, brown the turkey sausage with seasonings until fully cooked.

    • Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes, or until the onion becomes translucent.

    • Add the spinach and cook until wilted, about 2 minutes.

    • Pour in the chicken broth and stir to combine.

    • Let simmer for ~10 minutes.

  3. Combine and Bake:

    • Preheat your oven to 400°F (200°C).

    • In a large mixing bowl, combine the cooked cauliflower, turkey sausage mixture, and 2% cottage cheese. Mix well.

    • Transfer the mixture to a greased casserole dish and spread it evenly.

    • Top with grated Parmesan cheese.

    • Bake in the preheated oven for 15 minutes, or until the top is golden and bubbly.

  4. Serve:

    • Let the casserole cool for a few minutes before serving.
