I am obseeeessed with baked oats š I eat them almost every day for breakfast, so when I tell you that I have tested and perfected this recipe, I mean it! š¤š¼ Introducing my Perfect Protein-Packed Sourdough Discard Blueberry Muffin Baked Oats with Cottage Cheeseāa delicious and nutritious way to start your day. With just 385 calories and 31.5 grams of protein, this recipe is not only satisfying but also incredibly easy to make. This is literally cake. Ingredients:
32g whole grain rolled oats | 124 cal, 2.2g fat, 21.2g carbs, 5.4g protein
10g or 2 tbsp vanilla protein powder | 40 calories, 8g protein
25g sourdough discard | 40 cal, 12g carbs, 1g fat, 2g protein
100g or 1/4 cup 2% cottage cheese | 100 cal, 4.3g fat, 3.4g carbs, 11g protein
35g egg whites (from 1 egg) | 20 cal, 4g protein
2 tbsp milk of choice | 20 cal, 1g carb, 1g protein, 1g fat
10g honey | 30 cal, 8g carb
1 tsp baking soda
1/4 tsp salt
Frozen blueberries measured with your heart | 10cal, 2.5g carb
Instructions:
Preheat your oven to 350°F (175°C).
CombineĀ all ingredients except blueberries in a blender cup & blend until smooth.
PourĀ the mixture into an oven-safe mug or ramekin.
DropĀ in as many frozen blueberries as you likeāgo wild!
BakeĀ for 25 minutes.
