We celebrated my mom's birthday yesterday, and I decided to whip up a recipe that was both a treat and in line with our health kick (health is wealth, and we are feeling extra wealthy this year)! This protein chocolate cake recipe made with greek yogurt & no refined sugar resulted in a moist chocolate cake topped with toasted pecans and a rich chocolate frosting.
I like to use a food scale while baking to ensure accuracy and have less dishes to clean! It also makes it much more convenient for ingredients like greek yogurt and honey.

Ingredients
Dry Ingredients:
¾ cup (90g) oat flour
1 cup (100g) chocolate protein powder, preferably vegan (I used Swolverine Chocolate Cake)
¼ cup (25g) cocoa powder
½ tsp baking soda
1 tsp baking powder
½ tsp salt
Wet Ingredients:
½ cup (170g) honey
¾ cup milk
¾ cup (170g) 2% Greek yogurt
2 eggs
3 tbsp (42g) coconut oil
1 tsp vanilla extract
Optional: ¼ cup toasted pecans (chopped pecans roasted at 350°F for 6 minutes)
For the Frosting:
4 tbsp (70g) Greek yogurt
2 tbsp (15g) Dutch-processed cocoa powder
10g protein powder
1 tbsp (20g) honey
¾ tbsp milk
Instructions
Preheat your oven to 350°F (175°C).
Combine dry ingredients: In a medium-sized bowl, mix the oat flour, chocolate protein powder, cocoa powder, baking soda, baking powder, and salt.
Mix wet ingredients: In a large bowl, whisk together the honey, milk, Greek yogurt, eggs, and vanilla extract until smooth. Exclude the coconut oil for now.
Combine and mix: Gradually add the dry ingredients to the wet ingredients, stirring until well combined. Then, incorporate the coconut oil into the batter.
Prepare the baking pan: Lightly spray an 8-inch circular baking pan with cooking spray and pour the batter in.
Bake: Place the cake in the oven and bake for 23-25 minutes. Check for doneness by inserting a toothpick into the center—it should come out clean.
Prepare the frosting: While the cake is baking, mix all the frosting ingredients in a bowl until smooth.
Cool and frost: Once the cake is done, allow it to cool completely before frosting. Finish off by sprinkling the optional toasted pecans on top.
