60g sourdough starter discard (optional)
240g Greek yogurt
1.5 tsp baking powder
0.5 tsp salt

125g marinara sauce (1/2 cup)
113g 2% cottage cheese (1/2 cup)
52g mild or sharp cheddar cheese, shredded (2oz)
54g shaved parmesan cheese (1/2 cup)
30g spinach (1 cup)
8oz 93% lean turkey sausage (1/2 pound)
Instructions:
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Dough:
In a bowl, combine the freshly milled flour (or whole wheat flour), optional sourdough discard, Greek yogurt, baking powder, and salt. Knead until it forms a dough ball.
Roll Out the Dough:
Lay a sheet of parchment paper on a large baking sheet and spread olive oil onto it.
Roll the dough out with a roller (or a glass cup if you don't have one) as thin as you can without breaking it. Use your hands to press the dough down to help.
Make the Sauce:
