Made with Greek yogurt, cottage cheese, and freshly milled, nutritious whole wheat flour (I mill my own flour with my Nutrimill and hard white wheat berries, - learn more here) they do not lack in fluffiness, moisture, and sweetness. Whether you’re enjoying them for breakfast, as a snack, or dessert, these muffins will satisfy your sweet tooth without any guilt. Have two or three, they're only 120 calories ;)

Ingredients:

  • 215g bananaĀ (2-3 ripe bananas)

  • 113g cottage cheeseĀ (1/2 cup)

  • 150g Greek yogurtĀ (5% fat, 1/2 cup)

  • 1 egg

    180g whole wheat flourĀ (1.5 cups) - freshly milled or Bob's Red Mill whole wheat flour

  • 45g whey vanilla protein powderĀ (~1/3 cup)

  • 1 tbsp cinnamon

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/3 cup chocolate chips


Instructions:

  1. Preheat Your Oven: Set your oven to 375°F (190°C). Line a muffin tin with paper liners or use a nonstick silicone muffin pan.

  2. Blend Wet Ingredients:Ā In a blender, combine the bananas, cottage cheese, Greek yogurt, and egg. Blend until smooth.

  3. Combine Dry Ingredients:Ā In a large bowl, mix the whole wheat flour, whey protein powder, cinnamon, baking soda, and salt.

  4. Mix Everything Together:Ā Pour the banana mixture into the bowl with the dry ingredients. Stir until just combined. Fold in the chocolate chips.

  5. Fill Muffin Tins:Ā Pour the batter evenly among 12 muffin cups.

  6. Bake:Ā Place the pan in the oven and bake for 15 minutes, or until the tops are a golden brown.

  7. Cool and Enjoy:Ā Let the muffins cool slightly before enjoying their fluffy, chocolatey goodness.
