Ingredients for Rosemary Garlic Herb & Ghee Pork Tenderloin in the Crockpot:
Main Ingredients:
1 lb pork tenderloin
1 can broth (chicken or beef, both work beautifully)
Spice Rub:
1 tbsp monk fruit or sweetener of choice
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp Italian seasoning
1/2 tsp dried rosemary
1/2 tsp garlic salt or regular salt
1/2 tsp pepper
Topping:
3 tbsp grass-fed ghee or butter
Fresh sprigs of rosemary
Instructions
1. Prepare the Spice Rub:
In a small bowl, mix monk fruit (or sweetener of choice), paprika, garlic powder, onion powder, chili powder, Italian seasoning, dried rosemary, garlic salt, and pepperĀ to create a flavorful rub.
2. Coat the Pork Tenderloin:
Generously rub the spice mixture all over the pork tenderloin, ensuring it's evenly coated for maximum flavor.
3. Assemble the Crockpot:
Pour the broth into your crockpot.
Place the seasoned pork tenderloin into the crockpot along with any leftover spice rub.
4. Add Toppings:
Slice or chunk the ghee (or butter)Ā and place it directly on top of the tenderloin.
Lay the fresh sprigs of rosemary over the tenderloin for an aromatic boost.
5. Cook the Tenderloin:
Cover the crockpot with its lid and set to low for 2 hoursĀ or high for 1 hour.
As the cooking time nears its end, use a meat thermometer to check for doneness. The pork should reach an internal temperature of 145°F.
6. Slice and Finish:
Remove the tenderloin from the crockpot and slice into medallions.
Place the slices back into the crockpot for a few minutes to absorb more of the flavorful sauce.
7. Serve and Enjoy:
Serve warm with your favorite sides. This dish pairs wonderfully with roasted vegetables, mashed potatoes, or a crisp salad.
