Sweet Potato & Meat Pasta Medley

This Sweet Potato & Meat Pasta Medley is light but protein-packed and filled with flavor! It is a staple for meal prep/simple dinners.


Ingredients:

  • 350g penne pasta

  • 1 tbsp olive oil

  • 1 yellow onion, diced

  • 2 tsp minced garlic

  • 500g beef (or your choice of meat: venison, ground turkey, chicken, or a combination)

  • 1 sweet potato (400g), cut into 3/4-1 inch thick pieces

  • 1 can diced tomatoes (400g)

  • 1 cup chicken stock

  • Mozzarella cheese (to liking)

  • Kale or spinach (to liking)

  • 100g ricotta or feta cheese

  • Pecans (as topping, as desired)

  • Oregano, sage, and rosemary (to season meat)

  • Salt and pepper (to taste)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente according to package instructions. Drain and set aside.

  2. Prepare the Sweet Potatoes:

    • Preheat your air fryer to 400°F (200°C). Toss the sweet potato pieces with olive oil, salt, and rosemary. Air fry for about 10 minutes or until tender and slightly crispy.

  3. Cook the Meat:

    • In a medium pan, heat 1 tbsp of olive oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant (about 3 minutes).

    • Add the beef and summer sausage (or your choice of meat) to the pan. Season with oregano, sage, rosemary, salt, and pepper. Cook until browned, breaking it apart as it cooks.

  4. Simmer the Sauce:

    • Once the meat is browned, add the can of diced tomatoes and chicken stock to the pan. Stir to combine and let it simmer for about 15 minutes. Add the kale or spinach towards the end, allowing it to wilt.

  5. Combine Ingredients:

    • In a large 9x13 baking dish, combine the cooked pasta, beef mixture, and air-fried sweet potatoes. Mix well to ensure everything is evenly distributed.

  6. Add Cheese and Bake:

    • Top the pasta mixture with mozzarella, ricotta, or feta cheese, and sprinkle with pecans.

    • Bake in the preheated oven at 400°F (200°C) for 15-20 minutes, or until the cheese is starting to turn golden and bubbly.
