Ingredients for Sweet Potato Sloppy Joes:

  • 4 baked sweet potatoes

  • 1/2 tbsp olive oil

  • 2 lbs. organic grass-fed ground beef or ground turkey

  • 1 medium yellow onion, minced

  • 3 tsp minced garlic

  • 1 tsp fine sea salt

  • 3/4 tsp ground black pepper

  • 1 1/2 tsp chili powder

  • 15 oz. organic tomato sauce (1 1/2 cups)

  • 1/2 cup organic ketchup

  • 1/4 cup water

  • 2 tbsp organic maple syrup

  • 2 tbsp organic apple cider vinegar

  • 2 tsp hot sauce (adjust to your heat preference)


Instructions:

Step 1: Bake Your Sweet Potatoes: Preheat your oven to 425°F (218°C). Prick each sweet potato with a fork, then brush lightly with olive oil. Place them on a baking sheet lined with aluminum foil and bake for about 50 minutes, or until tender.

Step 2: Cook the Filling: Heat olive oil in a large, deep skillet over medium-high heat. Add the ground beef and cook for 3-4 minutes, breaking it apart with a spoon, until browned. Stir in the minced onion and garlic and cook for another 4-5 minutes until the beef is fully cooked.

Step 3: Build the Sloppy Joe Mixture: To the cooked beef, add the sea salt, pepper, and chili powder. Stir in the tomato sauce, ketchup, water, maple syrup, apple cider vinegar, and hot sauce. Bring the mixture to a boil, then reduce to a simmer. Let it cook for 10 minutes, allowing the flavors to meld and the sauce to thicken.
