This healthy recipe is made with greek yogurt and protein powder, and is free of refined sugar. The perfect treat for you and your swole mates/sweet cakes!

I use a kitchen scale when I bake to ensure accuracy and have less things to clean. 😉 It's so much more convenient for ingredients like honey and yogurt!

Ingredients:

Wet Ingredients:

  • 2 tbsp/28g honey

  • ½ tsp vanilla

  • 1 egg

  • ½ cup/125g Greek yogurt

  • 2 tsp/28g coconut oil

  • ½ cup milk

Dry Ingredients:

Frosting:

Instructions:

  1. Preheat Oven:

  2. Prepare the Batter:

    • Add all wet ingredients to a bowl and mix, adding the coconut oil last.

    • Add the dry ingredients on top and combine until smooth.

  3. Bake the Cupcakes:

    • Pour the batter into 8 muffin tins.

    • Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean.

  4. Prepare the Frosting:

    • Use an electric whisk to combine the frosting ingredients until creamy.

  5. Frost the Cupcakes:

    • Let the cupcakes cool completely before applying the frosting.

  6. Serve and Enjoy:

    • Store the cupcakes in the fridge and enjoy with your honey(s)!
