Ingredients:
Dough:
375g (3 cups + 2 tbsp) whole wheat flour
60g (1/2 cup) protein powder
12g (2.5 tsp) baking powder
1 tsp (5g) salt
30g (2.5 tbsp) monk fruit sweetener (or other natural sweetener)
125g (1/2 cup) milk
114g (1/2 cup) nonfat greek yogurt
120g (1/2 cup) sourdough discard
1 egg
Cinnamon Sugar Filling:
21g (1.5 tbsp) ghee or butter (room temperature)
8g (1 tbsp) cinnamon
50g (1/4 cup) monk fruit sweetener (or other natural sweetener)
Cream Cheese Frosting:
50g (1/4 cup) honey
5g (1 tsp) vanilla extract
85g (3 oz) low fat cream cheese
15g (1 tbsp) milk
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 10-inch cast iron skillet or a 10-inch circular baking dish.
Prepare the Dough: In a medium mixing bowl, combine the dry ingredients: whole wheat flour, protein powder, baking powder, and salt.
Mix Wet Ingredients: In a large bowl, add the monk fruit sweetener, milk, Greek yogurt, sourdough discard, and egg. Mix until well combined. Then add the dry mixture and mix until a dough ball forms.
Knead and Shape the Dough: On a lightly floured surface, knead the dough ball with your hands or a bench scraper. Shape it into a long rectangle using a rolling pin, about 1/4 inch thick. You may need to add more flour to prevent sticking.
Add Cinnamon Sugar Filling: Spread the room temperature ghee or butter evenly over the dough. Sprinkle the cinnamon and monk fruit sweetener evenly over the ghee or butter.
Roll and Cut: Carefully roll the dough into a thick log. Use dental floss to cut the log into 10 equal rolls. To do this, slide the floss under the roll, then cross one end of the floss over the other and pull.
Bake the Rolls: Place the rolls in the prepared baking dish. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and cooked through.
Prepare the Cream Cheese Frosting: While the rolls are baking, combine the honey, vanilla extract, cream cheese, and milk in a mixing bowl. Mix until smooth and creamy.
Frost the Rolls: Once the rolls are baked and slightly cooled, spread the cream cheese frosting over the top while they are still warm. Serve immediately.
Store the Rolls: Store any leftovers in an airtight container in the refrigerator.
